Recipe: Creamy Curried Potatoes

Curried potatoes (done)Ingredients:

  • 6 red potatoes, sliced to about 1/4 inch
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1/2 small sweet onion, sliced thin
  • salt
  • Sweet Curry Powder
  • chopped parsley (optional)

Instructions:

Heat oven to 350°
In a small casserole or other oven-safe dish, put down a layer of potatoes, then sprinkle with salt and curry powder. Layer some onions, then another layer of potatoes, then more salt and curry powder. Repeat this until all the potatoes and onions are used up.

Mix together the cream and sour cream with a blender or mixer of some kind. Add about 1 Tbsp sweet curry powder and mix. Pour over the potatoes, covering them completely. Sprinkle curry powder on top. You can sprinkle some chopped parsley on that for a nice presentation if you want.

Cover and bake for 45 minutes, or until potatoes are soft when poked with a fork, and top layer begins to brown.
