This is sort of a Mexican style answer to lasagna, using layers of corn tortillas instead of pasta. This recipe is vegetarian but you could use whatever you want in the layers depending on what kind of enchiladas you like.
Ingredients:
- 1 package of veggie fake chicken chopped into small pieces, or veggie crumbles* (or other fake beef)
- 9-12 corn tortillas
- 1 cup vegetable oil**
- 8oz package of shredded cheese (a cheddar blend works well)
- 2 cans of enchilada sauce (soup-can sized)
- 3/4 cup diced onion
- 1 can black beans, drained
- Chopped (or dry flakes) cilantro (optional)
- Sour cream (optional)
Instructions:
In a casserole dish, pour just enough enchilada sauce to cover the bottom.
Heat the oil in a small skillet. With tongs, dip a tortilla briefly in the oil, making sure to get both sides submerged (if the oil isn’t deep enough, flip the tortilla). Remove from oil; the tortilla should now be very floppy and soft rather than firm as it was before. Put the tortilla in the casserole dish.
Repeat with 2 or 3 more tortillas, cutting some in half if necessary (before dipping in oil) to create as even a layer of tortillas as possible in the casserole dish.
Add a layer of shredded cheese, then sprinkle a layer of diced onion, a layer of black beans, and a layer of the veggie chik’n or the crumbles.
Pour a layer of enchilada sauce, using about half of what is left in the first can, then repeat the tortilla layer process.
Repeat the layers of cheese, onion, beans, chik’n/crumbles, and sauce again (finish the first can), and then add a final layer of tortillas.
Pour the second can of enchilada sauce over the whole thing, covering evenly.
Sprinkle a layer of cheese over the top. Sprinkle with cilantro if desired.
Bake 30 minutes at 350°. Serve topped with sour cream.
*I use the Morningstar Farms “Meal Starters Chik’n Strips” strips or Morningstar Farms “Meal Starters Grillers Recipe Crumbles”
**This can be re-used later if you pour it through cheesecloth or a fine strainer and store in the fridge. Note that it may become cloudy in the fridge. As long as the cloudiness goes away when it’s warm, it’s fine to use again.
